{"id":1620,"date":"2012-09-05T11:16:30","date_gmt":"2012-09-05T11:16:30","guid":{"rendered":"http:\/\/tgr.net.au\/wp\/forums\/discussion\/southern-fried-chicken-with-warm-potato-salad"},"modified":"2012-09-05T11:16:30","modified_gmt":"2012-09-05T11:16:30","slug":"southern-fried-chicken-with-warm-potato-salad","status":"publish","type":"topic","link":"https:\/\/tgr.net.au\/wp\/forums\/discussion\/southern-fried-chicken-with-warm-potato-salad","title":{"rendered":"Southern Fried Chicken with warm potato salad"},"content":{"rendered":"<p>This is something I picked up years ago.<\/p>\n<p>1kg of chicken pieces-skin and bone on<br \/>\n2 cups of bread crumbs-make your own its easier<br \/>\n100 gm of chicken seasoning mix-<br \/>\n5 chat potatoes<br \/>\n3 tablespoons of good quality egg mayo<br \/>\n2 teaspoons of whole grain mustard<br \/>\n2 teaspoons of fresh lemon juice<br \/>\n2 tablespoons of soft broad leaf parsley- not the parsley butchers use to clean their elbows with!!<br \/>\n1 tablespoon of fine chopped red onion<\/p>\n<p>\nDust the chicken pieces in the seasoning mix-add some pepper if you like<br \/>\nWith left over seasoning mix-add it to the bread crumbs<br \/>\nThen brush each piece with the mayo and roll into the seasoned bread crumbs<br \/>\nPut onto  a couple of trays lined with baking paper and into a hot oven say 200 degrees for about 35 minutes until cooked and brown. Turn once<br \/>\nBoil potatoes in salted water until nearly cooked but still firm and set aside<br \/>\nMix 1 tablespoon of mayo into a bowl with mustard and onion add the parsley, and blend in lemon juice<br \/>\nQuarter the potatoes and fold into the mustard\/mayo dressing to coat generously<br \/>\nPlate the chicken and a couple of dollops of potato salad.<br \/>\nTo color the dish serve with a simple mixed leaf salad with a few quartered cherry tomatoes, garnished with Parmesan cheese shavings and a little 4 leaf balsamic vinegar (the good stuff)<\/p>\n<p>Goes well with a chilled dry white,<\/p>\n","protected":false},"template":"","topic-tag":[],"class_list":["post-1620","topic","type-topic","status-publish","hentry"],"_links":{"self":[{"href":"https:\/\/tgr.net.au\/wp\/wp-json\/wp\/v2\/topic\/1620","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/tgr.net.au\/wp\/wp-json\/wp\/v2\/topic"}],"about":[{"href":"https:\/\/tgr.net.au\/wp\/wp-json\/wp\/v2\/types\/topic"}],"version-history":[{"count":0,"href":"https:\/\/tgr.net.au\/wp\/wp-json\/wp\/v2\/topic\/1620\/revisions"}],"wp:attachment":[{"href":"https:\/\/tgr.net.au\/wp\/wp-json\/wp\/v2\/media?parent=1620"}],"wp:term":[{"taxonomy":"topic-tag","embeddable":true,"href":"https:\/\/tgr.net.au\/wp\/wp-json\/wp\/v2\/topic-tag?post=1620"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
