Southern Fried Chicken with warm potato salad
This is something I picked up years ago.
1kg of chicken pieces-skin and bone on
2 cups of bread crumbs-make your own its easier
100 gm of chicken seasoning mix-
5 chat potatoes
3 tablespoons of good quality egg mayo
2 teaspoons of whole grain mustard
2 teaspoons of fresh lemon juice
2 tablespoons of soft broad leaf parsley- not the parsley butchers use to clean their elbows with!!
1 tablespoon of fine chopped red onionDust the chicken pieces in the seasoning mix-add some pepper if you like
With left over seasoning mix-add it to the bread crumbs
Then brush each piece with the mayo and roll into the seasoned bread crumbs
Put onto a couple of trays lined with baking paper and into a hot oven say 200 degrees for about 35 minutes until cooked and brown. Turn once
Boil potatoes in salted water until nearly cooked but still firm and set aside
Mix 1 tablespoon of mayo into a bowl with mustard and onion add the parsley, and blend in lemon juice
Quarter the potatoes and fold into the mustard/mayo dressing to coat generously
Plate the chicken and a couple of dollops of potato salad.
To color the dish serve with a simple mixed leaf salad with a few quartered cherry tomatoes, garnished with Parmesan cheese shavings and a little 4 leaf balsamic vinegar (the good stuff)Goes well with a chilled dry white,
